
I have never met a bruschetta I didn’t like. This one was particularly good, with its salty and sweet flavors cradled on soft rosemary bread with a drizzle of rosemary olive oil.
You can’t go wrong with some crunchy toast piled high with flavor, a side of fruit and a glass of wine on a hot summer day.
You Will Need:
* Flavored Bread (I chose a rosemary loaf from the store but you can choose any flavored you like. Basil or Parmesan and Tomato would be fantastic)
* Flavored Olive Oil (I chose to use the same flavored oil as the bread. When you have this as an option choose it, as it will only intensify your flavor choice. My grocery stores have flavored oils, if you can’t find them use regular olive oil and a dried seasoning of choice)
* Jar of Sundried Tomatoes (one half jar per four slices of toast)
* Balsamic (I chose a Chocolate Balsamic but pick whichever you like)
* Prosciutto
* Herbed Goat Cheese (again, in this case, if you don’t find Herbed Goat Cheese, use plain and sprinkle with Herbs d’Provence)
* Micro-Greens or Fresh Basil (in this case, I used Micro-Basil)
TIPS:
If you want a sweeter flavor but don’t have chocolate balsamic, choose regular balsamic and a sweeter goat cheese like blueberry goat cheese instead of herbed goat cheese

Slice your bread into half inch slices. Drizzle with your chosen olive oil and toast until crunchy on the outside and still soft on the inside.

Strain half the jar of sundried tomatoes (half a jar per four pieces of toast – measure accordingly) keeping the liquid, and then cut the tomatoes into smaller pieces.
Mix your balsamic with the strained liquid (equal parts) in a small bowl. Coat the toast with the mixed liquid.
Top the toasts with the chopped sundried tomato.

Slice down the middle of a piece of prosciutto making two pieces. Lay them on each toast (I used one sliced portion – half a piece of prosciutto per toast – but depending on your liking use more or less).
Top with your herbed goat cheese (or goat cheese with a sprinkle of herbs). No specific amounts, this again is to your liking.

Drizzle your flavored olive oil over the top of each toast.

Plate on a long wooden board or serving platter with fresh basil or micro-greens.
Enjoy at room temperature.
